Merits of the Texas Longhorn

The biggest merit of the Texas Longhorn is it's ability to turn grass and sunshine into tasty nutritious beef.  This is largely due to it's unique ability to marble on grass. Most other breeds of cattle do not possess this ability and must be fed large amounts of grain to change their metabolism and force marbling prior to processing.  Feeding cattle grain causes the animals system to become acidic, thus promoting the growth of high levels of e - coli; a condition called acidosis.

The Texas Longhorn beef is 30 % lower in saturated fat than most other beef breeds.  When you combine this fact with the increase in omega fats found in grass fed beef, you have a very health product.  A study at Texas A + M university found grass fed Texas Longhorn Beef to contain less fat then chicken by weight.
This decrease in fat in the Texas Longhorn does not mean a decrease in flavor or tenderness; in fact quite the opposite.  The Longhorns natural ability to marble on grass means that it is laying down little packets of fat throughout the body as it is growing.  This ensures that the fat is located where it needs to be for maximum flavor and tenderness. 
The Longhorn has a slow growth rate, as it has never been signal trait selected for fast growth.  A slow growth rate equates to more flavor. 

Longhorns are known for their excellent immune systems and natural ability to ward off diseases that effect other breeds.  This great reduces antibiotic  use.

 

Merits of Circle Four Farms Beef

Circle Four beef is 100% natural grass fed beef.  At no point in the life of our cattle do they receive anything other then grass and hay.   

Grass fed beef is six times higher in omegas 3, 6 and 9 (good fat).

We do not use growth hormones or unnecessary antibiotic.

Our cattle are raised in as natural a setting as possible.  Our cows, calves and beef animals spend the pasture season on pasture and the winter in loose housing where they are free to roam inside and outside anytime. This combined with our low stress handling techniques ensures the health of our herd and greatly reduces the need for antibiotic use.
